Description
This quick, easy and most importantly delicious Chicken Soup will cure all your ills.
Ingredients
2 pounds boneless/skinless chicken breast or chicken thighs
6 cups cold water
1 teaspoon dried thyme
½ teaspoon dried sage
1-2 teaspoons Kosher salt (or to taste)
½ teaspoon black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons Creole Seasoning
1 12 oz package frozen mixed vegetables
4 cups chicken broth
½ -1 cup thin egg noodles or pasta (optional)
Instructions
In a large stock pot add six cups of cold water over high heat. Add thyme, sage, salt &
pepper, garlic powder, onion powder and the Creole seasoning stir, add chicken and bring to
a boil. Reduce heat source to a simmer, loosely cover and simmer for 30 minutes. Turn off
the heat source and allow to cool in the stock till you're able to handle (About 30-45
minutes)).
Cut chicken into desired size pieces and add back to stock. Add 4 cups of chicken broth, add
frozen vegetables and bring back to a boil. Reduce heat source to a high simmer, taste and
adjust seasoning if needed. Add egg noodles and cook until tender (About 10 minutes).
Serve hot.
